Carrot Cake
4 eggs
1 ½ cups oil ( use 1 1/3 cup or less)
2 cups flour
2 cups sugar
2 tsp baking powder
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
1 tsp vanilla
3 cups carrots (grated)
½ cups chopped nutmeats (optional)
Mix all dry ingredients together then add oil and stir well. Then add carrots and nutmeats and mix. Bake 45 minutes to 1 hour in 325-350° oven.
