Penuche


2 lb light brown sugar
1 cup evaporated milk
½ cup butter
¼ tsp salt
Vanilla
1 ½ cups chopped nuts
¾ cup candied cherries


Mix brown sugar, evaporated milk, butter and salt. Cook, stirring till sugar is dissolved. Cook without stirring to softball 238° Remove from heat and cool to lukewarm. Add vanilla, nuts, and cherries.
Beat until thick--pour into pan. Makes 3 lbs
